Healthy energy bars

Baaaaby it’s cold outside (not) but that’s not the point because it’s CHRISTMAS! I hope everyone is having a great time and spending these days with their family and loved ones! That’s what I’m going to do.

Last week I was really feeling like making a new healthy late night snack so I made these babies! Super yummy! But don’t eat too much because they are quite high in calories ;-)!

How to prepare

Mix the flours, seeds and pits in a bowl. Cut the dates into pieces and add this to the mixture together with the honey. Add water as well. Mix this with your hands till you get a dough. Is it too dry? Add some extra water.

Put some plastic foil in a form. Press the dough inside the form and put it in the fridge for at least 2 hours. Now cut 8 bars from the dough.

Ingredients (8 bars)

  • 200 gr almond flour
  • 50 gr coconut flour
  • 50 gr oatmeal flour
  • 3 tbsp. honey
  • 150 gr seeds and pits (pistachio’s, sunflower seeds, pine nuts and sesame seeds)
  • 5 dates
  • 100 ml water

Cooking time

135 minutes
